Paleo Stuffed Bell Peppers



Step 1:
Preheat your oven to 375 degrees. Line a large baking sheet with foil and spray it with nonstick spray.

Step 2:
Remove the tops of the peppers, core and seed them. Cut each bell pepper in half, lengthwise.

Step 3:
Place the cauliflower in a food processor. Process it until it resembles rice.

Step 4:
Warm the olive oil in a large, deep skillet over medium-high heat, for around 2 minutes. Now add the riced cauliflower, the onion and the beef and cook, mixing and breaking the beef up as it cooks for around 7 minutes, until the onion and cauliflower are soft, the beef is lightly browned and the liquids are vaporated. It might not look very good right now but do not worry about it.

Step 5:
Add the spices now and then cook it for two minutes mixing, until everything is well-mixed. Remove from heat and stir in the cilantro.

Step 6:
Fill each bell pepper, half with 1/10 of the mixture, packing it in, and place in the prepared baking sheet. Sprinkle with cheese, if using. Lightly spray with olive oil spray. Bake it uncovered, 30 minutes, until the peppersare tender and cheese is melted. Remove it from the baking sheet ontopaper towels and let it stand for at least 10 minutes before serving.
